For almost two decades, Barrafina, a beloved Spanish tapas bar founded in Soho, London, remained resolute in its decision to refrain from expanding beyond its capital roots. But after 18 years, the team behind this Michelin-starred establishment has unveiled its first international outpost, chosen strategically as Dubai. The founders, Sam and Eddie Hart, explain the significance of this move and why Barrafina’s essence will remain intact.
An Intentional Departure from Tradition
Barrafina has become a hallmark of London’s dining scene since its inception in 2007, cultivating a loyal following and a vibrant atmosphere centred around its iconic marble counter. “For us, Barrafina is a very special restaurant and we always felt that if it was ever going to leave London, it had to be done thoughtfully and with the right people around the table,” the Harts explain. With numerous international offers over the years, Dubai emerged as the perfect destination due to its dynamic culinary landscape and discerning clientele.
Why Dubai?
“Dubai felt like a natural fit. It’s become one of the great restaurant cities in the world. People here travel, they’re curious, and they genuinely appreciate quality and authenticity,” the founders state. Rather than opting for well-trodden markets like New York, Paris, or Hong Kong, Barrafina’s expansion to Dubai marks a deliberate choice to connect with an audience appreciative of cultural authenticity. “More than anything, we felt there was an opportunity to build something that could become part of people’s lives,” they add, emphasising their philosophy of creating establishments that encourage repeat visits.
The Counter Experience
A defining feature of Barrafina is its counter seating, which fosters an intimate connection between chefs and patrons. “Because the counter is Barrafina,” say the founders. “It’s where the energy comes from. It’s where conversations happen. It’s where the chefs and guests connect.” Despite the trend in Dubai towards larger, more luxurious dining spaces, Barrafina’s commitment to maintaining its authentic counter experience was non-negotiable. “Ultimately, great restaurants are about people,” they assert, underscoring the communal spirit that characterises the Barrafina experience.
Staying True to Culinary Roots
The culinary philosophy at Barrafina has also remained consistent. The founders are adamant that there will be no “Dubai-ified” version of their menu. “We never wanted to reinterpret Barrafina. The food, the spirit, the warmth, the counter experience – all of that had to remain true to what has made the restaurant so loved over the years,” they stress. This commitment ensures that the establishment will bring the same beloved dishes that made it famous in London.
Engaging with the Local Community
Upon entering Dubai’s restaurant scene, the Barrafina team was pleasantly surprised by its patrons’ knowledge and passion for food. “Guests here really care. They notice details. They travel. They understand hospitality,” they remark. The most gratifying aspect of their new venture has been witnessing how quickly Barrafina has woven itself into the community, becoming a regular stop for many diners. “Seeing familiar faces every week and watching guests bring their friends and family,” they note, reflects the ultimate aspiration of any restaurateur.
Acknowledgement and Gratitude
The recognition received this year at the dubai-lifestyle.ae Dubai Awards for Newcomer of the Year has been a significant highlight for the team. “We’re incredibly grateful, but awards don’t really change how we think,” they clarify. “We’ve always believed that if you focus on the fundamentals and take care of people, good things tend to follow. We’re not in a rush. We’re playing the long game.” The founders generously attribute their success to their entire team, underlining the collective effort that drives the restaurant’s operations.
The Signature Dish: A Simple Choice
For newcomers to Barrafina Dubai, the team unanimously recommends starting with the tortilla, a dish celebrated for its simplicity and quality. “It has to be the tortilla,” they insist. “People are sometimes surprised because it’s such a simple dish, but that’s exactly why it’s so special.” This dish encapsulates the ethos of Barrafina: minimal ingredients, exceptional technique, and a deep respect for culinary traditions. “Sometimes the simplest things are the hardest to do well,” they conclude, marking the tortilla as a fitting representation of their culinary philosophy.
