In a remarkable twist in Dubai‘s dining scene, a delivery brand has made waves without ever boasting a traditional restaurant. Good Burger, which began its journey as a clandestine delivery service operating from a taco kitchen, has emerged from the shadows to claim its stake in the bustling burger market. Founded by husband-and-wife duo Haider Al Assam and Luma Maklouf, Good Burger captured the title of dubai-lifestyle.ae’s Best Burger in 2024, despite existing entirely without a physical location.
The Unlikely Path to Success
“It definitely felt surreal,” reflects Haider Al Assam, recalling the moment they were awarded the title. “Winning the award really solidified that Good Burger was not just another burger brand.” This affirmation has driven the couple to finally establish a dedicated space for the beloved brand after six years of operating under the radar.
Good Burger’s origins date back to BBQ gatherings at home, where Haider crafted what is now known as the “Boujie Burger.” Friends encouraged them to start a burger joint, but it was only during the COVID-19 pandemic that they seized the opportunity to expand their offerings. As lockdowns necessitated a shift towards deliveries, Good Burger was born to help increase sales for their main establishment, Maiz Tacos. The positive reception led to a growing demand for dine-in experiences, ultimately paving the way for their first standalone restaurant.
Bold Moves in a Saturated Market
Opening a burger eatery in Dubai in 2026 requires considerable audacity, particularly in an already saturated market dominated by smash burgers. Good Burger has chosen to differentiate itself deliberately by not serving them. “We do not serve smash burgers, which we believed was a strong USP that would help set us apart from many of the other concepts in the market,” they explain.
This contrarian approach is complemented by a refreshed menu, boasting exclusives that assure a high-quality experience for patrons. Among their proudest creations is the Bistro Burger, which offers a steakhouse vibe transformed into burger form. “Honestly, all of them,” Luma says when pressed to choose a standout dish, before conceding to the Bistro Burger’s excellence.
The New Restaurant Experience
As they navigate their first weeks in a mall environment, the couple remains grounded in their journey. “It has not sunk in yet!” they admit, although the enthusiastic response from customers has been clear. “Just in a couple of weeks we had seen people come back four or five times.” The restaurant’s design mirrors the brand’s aesthetic: clean, bold, and unfussy, combining nostalgic diner vibes with modern touches.
Building Together and Looking Forward
Running Good Burger has undeniably transformed their relationship. “It’s taken over, haha! Conversations are always about work—even at home—which is a challenge,” they acknowledge. While the competitive F&B landscape in Dubai often looms large, they maintain a firm focus on consistency, quality, and service as the cornerstones of lasting success.
The couple draws inspiration from the rise of independent brands in Dubai’s food scene. “There is usually much more care, passion and attention put into the product and overall experience,” they say, finding strength in the support that homegrown businesses receive.
A Timeless Classic
With their new restaurant comes a fresh tagline: “The world changes, but good burgers don’t.” It highlights the enduring appeal of a well-made burger amidst shifting culinary trends. Future plans remain open-ended, but the couple dreams of broader horizons: “If all goes well, I don’t see us stopping here.” Above all, they hope to become a cherished memory for Dubai’s burger enthusiasts.
With the first few weeks showing promise and customers returning for repeat visits, Good Burger is off to a solid start in its exciting new chapter.
